how can I calculate bubble diameter and bubble velocity?
From numerical simulations you will have to rely on image processing tools or software such as Image J. Firstly you will have to save contour plots of void fractions from your simulation which you then post process in Image J by setting a threshold for the bubble identification such as 0.75, 0.8 etc etc. You can refer to the paper by Tingwen et AL https://doi.org/10.1016/j.powtec.2010.06.005

I would suggest saving the VTU files with the void fraction. Then you can contour them in paraview and extract properties. See How to add some usr-defined function in postmfix (bubble properties) - #3 by onlyjus.
